I was asked a few weeks ago by Brockmans Gin to create a recipe that would use and pair well with gin, and also match the changing of the seasons. I loved the challenge and made the most of the fabulous British produce that was available to me. We love our pies in Romania and although the filling is usually made with pork, I prefer to use game when in season. It’s leaner, local and available at independent butchers, which means that I can support small business in my area.
