Pastramă and Mujdei – story and dishes, Saturday 13th March, 5:30pm


Online cookery course about Romanian pastrama spice mix and the iconic mujdei, Romanian garlic sauce. We will make pastrami style chicken, garlic mujdei and farmhouse potatoes with onions and lardons.

Duration: up to 90 minutes.

This course is about the flavours of Romanian Pastrami. We will prepare the spice together and the marinade to make Pastrami style chicken thighs. Along the way, we will chat about how we use this spice mix in Romania, and how our cuisine has been influenced by the Armenian and Jewish communities. There is also an interesting story about how pastrami got to New York in the famous Rubens sandwich.

While the chicken is in the oven, we will start preparing our Mujdei - garlic sauce. This is a staple dish in Romanian cuisine and also in my family. We used to have a jar of it sitting in the middle of the table in the kitchen, for pouring over dishes or for dipping cornmeal in it. I will also tell you more about different types of mujdei and how we serve it in different regions of the country.

The side dish will be Farmhouse Potatoes - simmered then fried with onions and lardons. In this way, you will have a completely satisfying dish for dinner.

Diets and preferences: The course is not vegetarian but is dairy and gluten free. It is not suitable for those who don’t like garlic.
Prepping: The only prepping that you will need to do will be to pre-boil the potatoes and weigh the ingredients.

The course will be held on Zoom. Closer to the date, you will receive all the recipes and instructions. After the course, you will be sent a link to the recording, which will be valid for 10 days. In this way, you can cook the dishes at your own pace, if you can't cook along with us.
