Online cookery course about how to cook polenta and cornmeal dishes the Romanian way. We will make layered mamaliga, mushroom ciulama and salad.

Learn how to cook with cornmeal by making a layered Mămăligă, Romanian polenta, with me. Along the way, we will chat about how many polenta variations you can create from a basic recipe, our love for cornmeal, its history in Romania, and the Ottoman influence in our cuisine.
While our mămăligă is baking in the oven, we will make a Mushroom Ciulama - a recipe that comes together very quickly and works wonderfully with polenta. It involves a sour cream sauce, smântână, combined with garlic - a key ingredient in this dish, and parsley.
We’ll also make a tangy Cucumber salad with red onions and dill to go with everything.
To recap, we will make:
- A layered polenta dish with cheese and spring onions.
- Mushroom Ciulama with sour cream, garlic and parsley.
- Cucumber and red onion salad.
- Gaining confidence in cooking with cornmeal and learning about Romanian cuisine.
Prepping: No prepping needed ahead of the course, apart from slicing the mushrooms and weighing all the ingredients.
Diets and preferences: The course is vegetarian but not suitable for vegan, dairy free, gluten free or for those who don’t like garlic or mushrooms.
The course will be held on Zoom. Closer to the date, you will receive all the recipes and instructions. After the course, you will be sent a link to the recording, which will be valid for 10 days. In this way, you can cook the dishes at your own pace, if you can't cook along with us.
